Hey y'all!
I'm back with another mouth-watering recipe that’s perfect for a special dinner: Garlic Butter Lamb Chops with Sour Cream Mashed Red Skin Potatoes and Baby Broccoli. This dish is all about rich flavors and comforting sides that make you feel right at home. Let's get into it!
Garlic Butter Lamb Chops
Season the Lamb Chops: Start by patting your lamb chops dry with a paper towel. Season both sides generously with salt, pepper, and a sprinkle of garlic powder.
Heat the Oil: In a large skillet, heat some olive oil over medium-high heat until it’s hot but not smoking.
Cook the Lamb Chops: Place the lamb chops in the skillet and sear for about 3-4 minutes on each side until they have a nice crust and are cooked to your desired doneness. I like mine medium-rare.
Add the Butter and Garlic: Reduce the heat to medium-low, then add a few tablespoons of butter and a couple of minced garlic cloves to the skillet. Let the butter melt and the garlic cook until fragrant, about 1 minute.
Baste the Lamb Chops: Spoon the garlic butter over the lamb chops as they finish cooking. This step is key to getting that rich, buttery flavor all over the meat.
Sour Cream Mashed Red Skin Potatoes
Boil the Potatoes: In a large pot, bring some salted water to a boil. Add 2 pounds of red skin potatoes (leave the skins on) and cook until they are fork-tender, about 15-20 minutes.
Mash the Potatoes: Drain the potatoes and return them to the pot. Add 1 cup of sour cream, 4 tablespoons of butter, and a splash of milk.
Season and Mix: Mash everything together until the potatoes are smooth and creamy. Season with salt and pepper to taste.
Baby Broccoli
Prepare the Broccoli: Trim the ends of the baby broccoli and rinse them under cold water.
Cook the Broccoli: In a large skillet, heat a little olive oil over medium heat. Add the baby broccoli and sauté for about 5-7 minutes until they are tender but still crisp.
Season and Serve: Season with a pinch of salt and a squeeze of lemon juice.
Putting It All Together
Plate the Dish: Start with a generous scoop of sour cream mashed potatoes on the plate.
Add the Lamb Chops: Place the garlic butter lamb chops next to the potatoes.
Finish with Broccoli: Add a serving of baby broccoli to complete the plate.
Drizzle with Butter: Drizzle any remaining garlic butter from the skillet over the lamb chops and potatoes for an extra burst of flavor.
And there you have it! A delicious meal of Garlic Butter Lamb Chops with Sour Cream Mashed Red Skin Potatoes and Baby Broccoli. This is a dish that’s sure to impress and satisfy with its rich flavors and comforting sides.
Enjoy, y'all!
