What's up y'all!

Today, I have a recipe that is not for the weak or small stomachs: Shrimp & Grits Breakfast Bowl. This bowl is loaded with cheese grits, a fried hard egg, breakfast potatoes, and fried catfish. It's perfect for those mornings when you need a hearty breakfast or something to create for brunch. Let's get into it!

Shrimp & Grits Breakfast Bowl

Here's how to put together this Southern comfort breakfast:

Cheese Grits

  1. Cook the Grits: Bring 4 cups of water to a boil in a medium pot. Add a pinch of salt.

  2. Add the Grits: Slowly stir in 1 cup of grits, reducing the heat to low. Cook for about 20-25 minutes, stirring occasionally until creamy.

  3. Add the Cheese: Once the grits are done, stir in 1 cup of shredded cheddar cheese until melted and creamy. Season with salt and pepper to taste.

Fried Hard Egg

  1. Heat the Oil: Heat a little oil in a non-stick skillet over medium heat.

  2. Cook the Egg: Crack an egg into the skillet and fry until the white is set. Flip and cook until the yolk is fully cooked through. Season with salt and pepper.

Breakfast Potatoes

  1. Prep the Potatoes: Dice 2 large potatoes into small cubes.

  2. Cook the Potatoes: In a large skillet, heat some oil over medium-high heat. Add the potatoes and cook until crispy and golden brown, about 15-20 minutes. Season with salt, pepper, and a little paprika.

Fried Catfish

  1. Season the Catfish: Season 2 catfish fillets with salt, pepper, and your favorite Cajun seasoning.

  2. Dredge and Fry: Dredge the fillets in cornmeal. Heat oil in a skillet over medium-high heat and fry the catfish until golden brown and crispy, about 3-4 minutes per side.

Shrimp

  1. Prep the Shrimp: Peel and devein about 1/2 pound of shrimp.

  2. Cook the Shrimp: In the same skillet you used for the catfish, add a little more oil if needed. Sauté the shrimp until pink and cooked through, about 2-3 minutes per side. Season with salt, pepper, and a squeeze of lemon juice.

Assemble the Skillet

  1. Layer the Grits: Start with a generous serving of cheese grits at the bottom of your bowl.

  2. Add the Toppings: Top with the fried egg, breakfast potatoes, fried catfish, and shrimp.

  3. Finish It Off: Garnish with a sprinkle of fresh parsley or green onions if you like.

There you have it, y'all! A delicious Catfish & Grits Breakfast Skillet that's sure to fill you up and keep you going. Enjoy every bite of this Southern classic.

Happy cooking!
